Chinese almonds, a.k.a. “bitter almonds… a.k.a. “apricot kernels” in the West, but to Chinese they are just plain ol’ almonds and these rounded almonds have been used in China for ages for their medicinal qualities and also squeezed for a creamy milk. Don’t forget to drink your milk!
1 cup Chinese almonds, soaked 8 hours, drained and rinsed
3 cups water
¾ cup red dates (jujubes), packed deseeded
Blend all the ingredients together and pour the mixture through a strainer. The flour pulp left over will be sweetened with the dates and will work just like normal nut or seed flour. Serves 2-4
